Kojicon is back for its 5th year with Kojicon 2025: Tradition Meets Transformation, celebrating the rich heritage of mold-based fermentation and the groundbreaking innovations shaping its future. Fermentation serves as a timeless bridge, preserving techniques honed over generations while sparking fresh creativity.
From cherished family recipes passed down through the years to the transformative process of turning grains into soy sauce, Makgeolli, and umami-rich foods, fermentation is a testament to both continuity and evolution. This year, we’ll explore where these age-old traditions intersect with modern creativity, highlighting how today's fermenters are reimagining familiar flavors and crafting bold, unfamiliar ones.
What is Kojicon?
Kojicon is a two-week interactive virtual conference happening from February 17th to March 2nd 2025. Throughout these two-weeks, participants will gather virtually with Chefs, fermenters, scientists and many other experts in the field to share their passion and skills for utilizing the magic of this edible mold.
can I purchase recorded content?
Yes, you can still purchase FULL recorded content from 2025 and from 2024, 2023, 2022, and 2021. Purchase a Kojicon 2025 ticket to gain access to previous content, as well as live sessions + access to our Discord channel.
You can access recorded content until November 30, 2025.
what does my ticket include?
Your recorded content ticket includes access to previous recordings of all sessions from 2021, 2022, 2023, 2024 and 2025 for viewing at your convenience.
This ticket also includes access to the Kojicon Discord Community Channel. Participants and presenters can use this space to ask questions, continue conversations, and share information.
